5 INGREDIENT RAW DATE BITES

I found a sad box of dates lurking at the back of the fridge the other day. Cold, alone, and forgotten. I couldn’t bring myself to bin them… so instead these gorgeous little raw, vegan date bites were created.

They’re chewy, coconutty, crunchy and sweet. They’re also full of protein thanks to the almonds, and are perfect for when you’ve hit a slump and need a boost of energy.

Ingredients:

1 handful of medjool dates

1 handful of almonds

1-2 tsp of coconut oil, melted

a dash of coconut milk

desiccated coconut to decorate

 

Recipe: 

Soak your dates in a bowl of hot water for about an hour and then deseed. Add your almonds to a blender and blend. Add in your dates and continue to blend. The mixture will start to stick together (you may need to scrape down the sides a few times). Add in your coconut oil and continue to blend. At this point your mixture will be really sticky so add a dash of coconut milk to make it slightly more wet.

Spoon out your mixture into little blobs onto a piece of baking parchment. The mixture is quite a sloppy/sticky and these will look nothing like a round ball at this point. Put the baking sheet with the blobs into the freezer and leave to firm up for 30 mins. Take them out and roll into balls, then roll the balls in the desiccated coconut. Put them back in the freezer and leave for a few hours or overnight.

I keep them in the freezer as they don’t freeze, but keep beautifully cold. They’re best enjoyed with some raspberries for a bit of tart to cut through the sweet. Enjoy!
