Pink Protein Pancakes

These. Are. Awesome.

Deliciously light, fluffy and filling, but minus the bloat and guilt of your normal stack of American Pancakes.

Super easy to make, you can whip these babies up in under 10 minutes with only 4 ingredients.

To make a stack of plain Protein Pancakes you will need:

1 ripe banana

2 eggs

1 teaspoon of baking powder

Ground cinnamon to taste

Coconut oil

Topping:

Handful of frozen raspberries / berries of your choice

Almond Milk 

Squeezy honey

Break up your banana and mash with a fork (don’t blitz them / put them in a food processor as they will come out flat and burn easily when cooking.)

Whisk your eggs and add to your mashed bananas

IMG_2419Add your baking powder and cinnamon and mix.

Heat a frying pan and add your coconut oil. I like to use coconut oil in all my cooking now as it’s a much healthier option than heating olive oil / butter / etc. The coconut oil also gives these protein pancakes a lovely taste.

Spoon 2 to 3 tablespoons of batter per pancake into your frying pan. Wait for them to start bubbling on top and then flip.

IMG_2422You should end up with a beautiful stack of these (they don’t look too pretty but they taste amaze!) IMG_2423IMG_2425Now on to toppings & sauces… you can use anything you fancy and keep them as healthy or as indulgent as you like…

This time I fancied something light and fruity and so went with some frozen raspberries blitzed with a dash of almond milk. Just add both to a blender and blend (this is my weapon of choice). I use it all the time, it’s great for breakfast smoothies, smoothies on the go etc. Let me know if you would like to see a smoothie recipe on the blog!
